Coach Joe Crosby delivered
the keynote address, at the Nevada ProStart® Student Invitational; which was held
at the Dragon Ridge Country Club. On Friday evening, February 22, 2008 approximately
400 students, parents, teachers and industry leaders & professionals watched
as Moapa Valley High School and
Carson City High School took top state honors, in the culinary and hospitality
categories; respectively.
A key part of Coach’s message to the students, educators and industry
in attendance was to:

You are the “future” of the industry

Believe in yourself, regardless of what others think
-
Follow your heart and your passion
-
Help others believe in themselves
-
Respect yourself, your industry, the volunteer mentors and
most importantly the educators
that commit and dedicate their time to prepare you for the future
Coach also asked the students to
take a strong look at how they could give back to others along the way.
An example of Coach’s message to
the students and educators follows:
Coach talked about
a young man who recently asked his advice about a personal dilemma. The ProStart® student was a member of a team, in attendance, at the 2008 Carolina’s ProStart® Student
Invitational. He asked Coach about
his career choice. The student shared with Coach that he really wanted to pursue
a career in the culinary world. At the insistence of his parents he was going to
pursue a career in medical field, as a doctor, because he was smart and finances
are an issue for his parents. He mentioned that he could attend a state university
and receive scholarships to help him pursue his career choice in the medical field.
Coach told the young man that he was going to have to follow his heart and his passion.
When the young man mentioned that
his parents were not in a position to financially support his choices, if he chose
to pursue a career in culinary, Coach asked the young man where he wanted to attend
college. When the student mentioned that he wanted to attend the Culinary Institute
of America, in Hyde Park NY, Coach told him that he had made a great choice. Coach
also mentioned that he was proud of him for trying to pursue his dream. The student’s
conversation and passion for the industry must have made a huge impact on Coach.
In his closing remarks he said…
“I applaud this young
man for following his heart and being committed to what he
truly wants to do in the industry. What this young man does not know is
that I am currently preparing to pay his tuition at the CIA. If he believes that
strongly in himself…I believe in him too!”
